Saint Hildegard speaks mostly of fresh water fish such as :

Trout (only for the healthy)

Pike

Perch

Carp (only for the healthy also)

Healthy meats are :

Duck (for healthy people only)

Sheep and mutton (except in winter)

All pork sausages and cold-cut or deli-type preparations

Animal by-products

Butter, milk and cheese “can be eaten moderately by either the sick or the healthy”

«To digest cheese well, add a bit of cumin : the tip of a knife’s worth. »

Eggs «can be eaten, but with moderation, because they can be as harmful to one’s sick inners as can be raw flour, in that they adhere solidly to them  and thus provoke stomach mucus and humours. But a man with good inners can overcome this».
