A few excerpts from Saint Hildegard:

Raw dark brown sugar (not the pale yellow sugar) : «Once dried out (dried out by heating), taken in food or drink, it comforts.»

Salt (whole sea salt, greyish) : «If one eats without salt, the inside of the body becomes tepid, but eating salt in moderate quantity provides strength and health.»  The taste of salt must not dominate.

Wine vinegar : «Is good to add to all foods, if it is added so as to not remove their flavour, but in a way that one can moderately detect the taste of vinegar.  Taken with a bit of food, it evacuates whatever was not properly digested, reduces in one the humors, and enables food to be  digested in the right way .»

Hemp : Hildegard writes that «health is in the seed of hemp».  Recent organic analysis of this oil reveals that it contains the ideal proportion for our health of the essential fatty acids omega 3 and omega 6 in a ratio of about 1:1, as well as essential amino acids (proteins). Hemp seeds can be sprinkled on morning spelt porridge, yoghurt, salads, etc.
